Tasty Treats for One!

So, every time The Mister goes out of town, I like to prepare meals-for-one that are super-indulgent and decadent even though they are on a small scale and built for one person. Although some might say it is a mere sandwich, I think the grilled panini is god's gift to those who love anything slapped in between two hunks of yummy bread. This is one of my favorites. I don't have a name for it, (and like most of my recipes), it is borrowed from others, and it is a combination you can find in any good cafe or bistro. Here's what you'll need.... brie prosciutto panini A fresh bunch of greens, a bit of red onion, some imported prosciutto (sliced very thin), any type of aioli, a really good brie, camembert, (or your choice of gooey soft cheese) and your favorite rustic roll (I am using a ciabatta roll). Slice your bread and slather on a generous amount of the aioli, and then follow it up with slices of cheese, a generous handful of greens, prosciutto and red onion. DSCN1307 DSCN1317 DSCN1318 DSCN1320 DSCN1323 I finish of the exterior with a light brushing of olive oil and stick it on an indoor sandwich press. You can also use a stove-top grill-pan and cover your sandwich with a heavy pan to weigh it down. Leave your sandwich for a few minutes (3-4 should do the trick), and then pull it out when it looks golden and crispy. DSCN1327 DSCN1328 DSCN1331 DSCN1332

Slice it in half, and serve it up with your favorite sides. As it is summer, I am going simple with homegrown tomatoes (with only sea salt and pepper) and a couple of clementines for dessert.

As you can see, it was just terrible. Totally some good eats for one!
